To change the notehead font on just a section of the music, use staff styles. A staff style can be applied on a partial measure selection, and in this way you can create a new staff style that uses another notehead font on just one or a few notes.
To change the notehead font on a single note only, use the Note Shape Tool (in the Special Tools).
